(12,253 posts)Just worked most of mine out yesterday. Waiting for one more form and I'm done. You have months of this to go. He'll appreciate having a nice spaghetti dinner from home.

(106,886 posts)My dinner plate left overs were some blackened steak, mushrooms and corn. (Literally left over plate, wrapped and stuck in the fridge).
Pureed all with some beef stock, cumin, paprika, salt and pepper to add as a base for the chili.
Sauteed onion, garlic and green bell pepper in olive oil till almost browned.
Added chunks of steak from the half I didn't plate. Tossed and browned all. Added the puree.
Added ~ a half can corn drained, whole can of black beans with all the can liquid, 2 serranos, coarse chopped. Simmered low for ~ 30 minutes, uncovered.
Made a thickener with some cold beef stock & corn starch. Stirred and stirred and stirred into the chili pot. Set on as low a heat as I could, covered, for another 20 minutes.
Let it set for a bit, made up a bowl full and wondered - where the heck is the cornbread?

(28,481 posts)We had a late lunch before going to the movies (Silver Linings Playbook) so nacho snacking is on the menu for tonight.
I usually make quiche with seafood but today bacon, asparagus, green onions, swiss cheese, sherry.

(28,481 posts)Turkey, cornbread stuffing, cranberries, a can of cream of chicken soup and a wee bit of turkey gravy. Yum!
