Chocolate for Valentine's Day

Today NPR has four recipes online using dark bitter chocolate that sound great; I love Mexican mole so I plan to try the others: Choocolate and Red Wine Braised Shortribs, Cocoa-Jerk-Rubbed Pork, Cincinnati Chili, and Mexican Mole.

two moles on the menu. Here is the description:

February is the month to celebrate love and partners, and our Taste Club this month is no exception! Tonight is all about dinner made with luscious, decadent chocolate partnered with rich red wine. Tonight’s pairings include:

• a sparkler and a traditional Latin appetizer
• Lime and Avocado Salad with fresh seafood
• Two luxurious and creamy Moles paired with the perfect reds
• Chocolate Chili Cake topped with Smoky Chocolate Glaze and an amazingly perfect pairing

The Cocoa-Jerk-Rubbed Pork you listed sounds interesting!
