About two weeks ago we bought a big sack of really big, nice looking lemons and a sack of small but nice looking limes. We also bought 1.5L of Everclear (190° alcohol).
We zested 12 lemons and added the zest to 1L of the Everclear. We did the same to 8 of the limes and added them to the remaining 500ml of the alcohol. This was in glass jars and put into a spot we have under the house that is nice and cool, but never freezes.
Tonight we took the bottles up into the kitchen. The lemon mixture was a light, clear yellow. The lime was a brighter green, but still nice and clear.
We made a big batch of double simple syrup (2 parts sugar added to one part boiling water, dissolved, and allowed to cool). Our goal was 60°/30%. We started at a 2:1 ratio with the infusions. A small amount of water added at the end tamed the viscosity and the brew was ready.
We also did a small test batch with Splenda. It turned out that the water, Splenda, and the infusion was too thin. The viscosity of the sugar is really needed for proper mouth feel. Instead of sugar, though, we added agave syrup. A surprisingly small amount did the trick. The subtle agave taste was unnoticeable.
Now . . . does anyone know where we can get pint sized clear bottles with screw caps so we can package this to give away to friends?

(37,549 posts)bottle on the left, had stickers made. It was a hit. I used Svedka vodka, not everclear, though.

(67,808 posts)We ruined a batch of this a while back by using some sort of synthetic rubber stopper. The Everclear literally dissolved the cork on the inside of the bottle. That ruined the whole batch.

(111,277 posts)although I don't know if they'll be any more durable than the swing top arrangements. They are cheaper, anyway.
Now all you need to do is print up some fancy labels for Stinky's Finest.

(135,425 posts)The business with the sugar is just how they did it. I never saw any attempts to use other sweeteners.
Good stuff, isn't it--but you have to be careful, because if you have more than one, you will find yourself brushing something off your shoulder, only to discover it is the floor!

(32,086 posts)They, and other second-hand shops, always seem to have at least some fancy bottles and jars that would be just right for gift purposes.
Have you thought about making a grapefruit version?

(41,694 posts)His dwarf lemon tree in the back yard had a bumper crop of huge lemons-they were almost the size of oranges.
you wouldn't think a six foot tree would produce almost a 1000 lemons-the branches were bowed down touching the ground.
