1. Special Anniversary dinner

So far, this is what I'm planning for our wedding anniversary dinner:
Steak Flambe Moutarde
Oven roasted cauliflower
Greek Salad with beets and feta (Or maybe Caesar Salad)
Store bought mini carrot cake

But it could change as the day wears on.

Thought of having a salad with it, but decided to add a carrot and a red pepper to the soup instead and buzz it all into a chunky, tasty puree with my immersion blender.

Takes me back to my college years when I frequented a restaurant called The Bleu Ox. Their specialty was that burger you made tonight.

I roasted the beets yesterday and will make the soup this morning. And I still have some great cheese and some good bread.

I'm not a big mushroom lover, but it's a texture thing. Pureeing the soup gave me all the flavor without the "chewiness".

That beet salad is one of my favorties. I first had it in a restaurant in New Orleans and have made it at home for years.

What I wouldn't give for a meal like that.

Except it would make glycemic levels go sky high. Except for the beans, maybe.
