A HERETIC I AM

You know that hunk of leftover Velveeta in your fridge? Got Tomatoes? Tomatoes and Cheese.

TOTAL comfort food.

Mince up a couple cloves of garlic.
Chop up that leftover hunk of onion in the crisper drawer
Ditto the green pepper
And for that matter, any other veg you have left over.

And tomatoes. 1 good sized one for every cup of diced Velveeta. More or less, depending on what you have available.

Saute' the veg all up, then cube the Velveeta and toss in. Add any other cheese you like as well, such as a slice or two of Swiss or some mozzarella. Hell, I even rendered out two slices of diced bacon and threw that in.

Herb it up however you like. I used oregano and cumin ( I call cumin "armpit spice" cause dammit, it smells like an armpit when you first toss it in any dish!) and a bit of parsley.

When it's all melty 'n stuff, it'll look like this;



Toast up the heels of the bread in your freezer or wherever;



Ladle it on.


Don't forget its partner!


Salt and pepper on top.

Perfect for a rainy Sunday afternoon, which is when my mom used to make it for us.

Simple, tasty and a perfect way to get rid of some leftovers!

I'm always throwing all kinds of leftovers (veg. & meats) in the skillet, browning, adding Worcestershire Sauce, and assorted seasonings like garlic, onions, etc.... then serving with noodles or rice. But combining with Velveeta and serving on toast sounds really yummy.

I haven't seen Velveeta since I was a child! I didn't realize they still made it! I seem to remember it came in an enormous box.

I would guess you could do this with a bit of milk and shredded cheese, as well!

I liked it better than the original, still have a chunk of it in the fridge, it takes me a couple of months or more to eat that much.

was the Velveeta melted with peas or tomatoes or whatever and tossed with (over) cooked spaghetti.

I still buy the occasional box of Velveeta to keep for the times the whole world is against me. These days it's corn spaghetti, but the idea is the same and it's still comforting.

And in my mother's defense, she was an engineer who got thrown out of her job at the end of WWII (even though she'd held it before the war) because women had to go back to the kitchen to make room for a conquering hero. She always resented the hell out of that and she never did learn to enjoy cooking.

also like to ad chopped up fresh cilantro and tomatoes to Alfredo sauce.
