1/2 red pepper chopped
1 medium onion, chopped
2 cloves garlic, minced
1/2 bag frozen spinach (or 4 cups fresh baby spinach, chopped)
8 oz. mushrooms, sliced
1 c reduced sodium chicken broth
Black pepper to taste
Feta & Parmesan cheese
1/2 lb. cooked spaghetti
Directions
Saute onion until it's transparent. Add garlic and cook until it's slightly browned. Add red pepper and mushrooms and sauté for five minutes or so. Then add spinach and chicken broth. Simmer for a minute or two. Fold pasta into sauce and serve with the two cheeses.

from our garden earlier in the day- three different mustards, collards, kale. Left out the mushrooms and broth - used some olive oil - used scallions instead of garlic, used lots of red pepper flakes, only a dusting of parmesan - served tossed with whole wheat spaghetti. Yum!

It sounds so good after a hard day at work.
Not too heavy, yet very tasty and satisfying...
