What's for Dinner ~ Wednesday May 22nd - Wish Me Luck Edition

Allo!

Started a Nuvigil trial today to see if it can help with this crazy fatigue. Hopefully it will give me a bit of an energy boost, because so far, the apnea treatment is just making me more tired, and totally uninterested in cooking.

I hope you are all well and the weather is behaving where you are. We keep alternating between spring and monsoon-wannabe rains.

We ended up with garlic bread. lol
Bill brought home some weird semi-flu, and neither of us really felt like eating so we opted for quick carbs.

Spring seasons on record - or so they say. Everything is super green and lush around here and the rivers are nice and full.

Which I nearly finished the other night but conked out and put it all in the refrig 'cuz I was too tired.

Such are the perils of having lunch at 5 p.m., like I am now, and cooking dinner starting around 9!

Hey, Lucinda, here's to the new treatment:

I watched a video yesterday where someone roasted a whole cauliflower head, uncut, and then used a vinegar based sauce on top after baking. Looked yummy.

I hope that this new medication helps, Lucinda. It must be miserable to get no relief in the form of sleep.

Soo good!

Editing to say i'm still adjusting to the bipap thingy, but I hope it will sort itself out soon. Bill and I seem to have caught some bug, so I am not sure if my uncomfortable day yesterday was from the Nuvigil or the sick dude Bill worked with earlier this week.

Brief (and beef) side trip vacation. Laid back, eating well. Rainbow trout is defrosting for an egg scramble tomorrow AM before maddezmom and I head back to her home base and pinto heads back to his CA casa.
