(146,218 posts)I have a recipe which looks good, but I've not made it before.
Also, a salad with apples and endive and the leftover chicken/sweet potato/peach kebab.

(135,060 posts)Maddie loves it as well, however I totally mess with the purity of the recipe and add fresh chopped tomatoes.

(146,218 posts)My recipe basically just says boil pasta, toast pepper in butter, add more butter, pepper mixture, cheese and reserved pasta water.
Is that it?
maddezmom
(135,060 posts)I like mine a little thicker so I reduce the amount of the reserved liquid. I have also been know to add spinach or any other veg diced or chopped. It is a great meal for me to make when I am solo so glad you brought it up. I have being trying to watch my carbs but I think I am going to try it with a wheat pasta.

(146,218 posts)It was absolutely perfect in every way.
For whatever reason, the simplicity of it made me very anxious - perhaps because there would be no way to hide or repair a mistake.
I went to sleep thinking about it and woke up thinking about it. I want more and I want it now!!

(135,060 posts)I think I am going to make it tonight for Maddie and me, if she will eat wheat pasta.

(106,886 posts)of a chef's ability to handle a very simple dish well. No frills, no sauces, etc.

(146,218 posts)He wholeheartedly approved and he lived in Italy for years.
My hear soared.

(106,886 posts)Ingredients
Kosher salt, to taste, plus 1 teaspoon
1 pound spaghetti
3 cloves garlic, minced
1/2 cup extra-virgin olive oil
Pinch red pepper flakes (I use more than a pinch)
2 tablespoons chopped flat-leaf parsley
1/2 lemon, zested, optional
Freshly grated Parmigiano-Reggiano, optional (I always include cheese)
(Also add some bread crumbs. That's just how Sicilian in-law side of the family did it.)

(146,218 posts)I'm a little afraid of it's simplicity. Not that that makes any sense.

(106,886 posts)Hope you go for it. Love simple pasta - sometimes I just throw together pasta with butter, black pepper and cheese. 12 minutes, it's lunch.

(146,218 posts)I'm going to give it a shot.

(39,961 posts)try apples with a beef chuck roast, onion and garlic. Melts in your mouth and makes gravy to die for!

(135,060 posts)The kids will probably have left over grilled chicken. Maybe a pork loin but can't decide right now.

(146,218 posts)You make me jealous everytime you make these.
I got some Korean short ribs from TJ's in the freezer and might bring them out tomorrow. No potatoes, but I have corn on the cob.
greatauntoftriplets
(175,742 posts)Last I had was really good. I've seen the Korean short ribs. I *LOVE* short ribs but am not certain I'd like all the spices. They're that good on their own.

(39,961 posts)It's a pretty standard thing I cook, and I believe I've shared the recipe, but the family likes it, and it's darn tasty with a salad and garlic bread.
I caramelize the onions, and that just makes it better when I infuse some lemon juice in there
Plus I don't have to cart a bunch of stuff around the corner where my parents live to cook for them. It's pretty tasty, isn't too difficult, and everyone is happy . Fresh Unsweetened Iced tea, Mom makes a salad, and everyone has Sunday dinner that doesn't inflame Dad's gout.

(146,218 posts)I think it's wonderful that you have Sunday supper with your family.
It was always our big sit down meal every week.
Aerows
(39,961 posts)But we can sit down and eat dinner on Sunday, so I guess it's okay . I love my family and it is a blessing for me to have them close (and is a curse, too, LOL)
Callalily
(14,890 posts)It's a recipe I tested for America's Test Kitchen.
OMG! Super yummy! Those people sure know how to build flavors.
But...the recipe sure does make a lot of dishes to make!

(39,961 posts)Can I have a fork? That looks AWESOME. Recipe, PLEASE! Shrimp, tomatoes and garlic I see, but will not second guess the quality of peppers that are chunked and floating around in there nor the herbs.
Callalily
(14,890 posts)I'll send the recipe via email as this is a recipe in the testing stage and Cooks Illustrated would rather it not be published.
