Anyone in the mood for a recipe challenge?

Back in the olden days at C&B we would occasionally select a dish, or an ingredient, come up with a yummy recipe, and then post our results in a single thread by a certain date.

I was thinking it might be fun to do it again!

What I like about doing this challenge is that it lets everyone who participates add something fun for other people to try. The recipes can be as simple, extravagant, expensive, or budget friendly as you like - depending on what you feel like making. You could also just post a favorite recipe, if you are too busy to tinker with something new during the challenge period.

Anyone interested?
And do you have any suggestions if you are?

I am quite low on supplies, though, so may have to improvise extensively.

Any ideas?

I had the most exquisite dinner last night at a fabulous place and they made a polenta that could only be described as whipped Parmesan Cheese; not a shred of grit, rich and satisfying. After trying to make it with the pound of butter and cheese that the chef probably used, it wouldn't be something I would be able to eat it very often and live long....But for a once a year treat it was terrific.

I know that lots of folks who are gluten intolerant are able to do polenta. It can be inexpensive or dressed with caviar....

It's my current obsession.

I just checked my zucchini and I'm in for a bumper crop! I think I still may have a muffin or two lingering in the bottom of my freezer from last year LOL!....I seem to recall seeing a cookie recipe using it floating around.

It's something I haven't made very often, and I think it would be fun to play around with recipes this coming Autumn!

I use them together a lot ,and often sub one for the other, depending on what is available.

I will try to find a recipe that is tasty without the heaps of butter, sugar and cream I love.

Sorry I have been away again. Shaky couple of days. Better tonight.

Maybe we can do the challenge and post by the end of the month?

Basically you shred the squash and cook it down with shallots, butter or EVOO and salt and pepper until it is reduced and thick. Sounds yummy.
