4. Leftover tuna noodle casserole

My cousin works for a seafood company where everyone is libertarian/conservative (I didn't know that about the seafood industry). Anyway, she visited and gave me a couple of cans of tuna, hence the tuna noodle casserole. The veg will have to be squash, because it's everywhere in my garden.

There are crushed potato chips on the casserole. Crushed potato chips as a topping are an old fad that has faded for good reason, as I just found out.

I don't have much to offer - cocktail fixings, some wine and maybe some things I can make into a cold antipasto plate.

So I'm going to have deli chicken salad with bread and some fruit. Cherries, I think. I also have some raspberry sorbet and probably will have that for dessert.

So easy, so good....but the tomatoes need to be great!

we are in the midst of the tomato onslaught and loving every slice of it!

In case anyone is interested...

In a large pan, in 3 tbsp butter over med. heat, saute until tender 1 large sweet onion (chopped), 4 stalks of celery (chopped), 2 cloves of garlic (minced) - add 1/2 cup dry red wine, and 3-4 lbs chopped ripe tomatoes (we used a mix of heirlooms - German Johnson, Brandywine, Cherokee Purple and Striped German), 1 tsp thyme, 1 tsp oregano, 1 tsp salt and a few grinds of black pepper. Bring to a boil then lower to simmer, mix well, partially cover and simmer for 30 min - add 3 generous springs of fresh basil, chopped, for the last 10 min. Turn off the heat.

Using an immersion blender, puree the soup until quite smooth - stir in 1 cup of milk, half and half or a mix (as you desire) - stir well - serve with grated sharp cheddar and nice crusty bread or garlicky croutons.

I did a crockpot meal-

1 bag of frozen tortellini

1 bag of fresh baby spinach

1 cup chopped mushrooms

2 cans italian style tomatoes

4 cups veggie broth

1 block of cream cheese cubed

Cook 5-6 hours

It's so good!

* I also added some chopped white onion only because I like onions!
