Hi, anyone have a 'Better Homes and Gardens' cookbook pre:1981?

Last edited Fri Sep 27, 2013, 02:18 PM - Edit history (1)

We all know this book by the red and white check cover.

A friend has asked me to look up and old recipe but it must have appeared in an addition before my 1981.

It is a Meatloaf stuffed with Broccoli, Ham and Cheese.

Can you take a quick look to see if your pre-1981 book includes this recipe? I'd love to try it myself too. I had an older addition of this book but replaced it with the one I have now. Bad mistake. The old one was better.

Any help will be appreciated.

Good grief. It is Betty Crocker, not BH&G. I'm getting too old to remember half of what someone tells me.
Both are red and white and I figured mine was the one she was referencing.

The recipe posted prior to my edit may be the one. I'll keep the faith that one of you fine folks will find what I'm looking for.
Thanks,
PR

None of the recipes have broccoli or cheese in them. Sorry!

Meat Loaf Roll

1 package (10 ounces) chopped broccoli or frozen leaf spinach
2 pounds hamburger
2 eggs
3/4 cup soft bread crumbs (about 1 slice bread)
1/4 cup catsup
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano leaves
1 teaspoon salt
1 package (3 ounces) smoked sliced ham
3 slices mozzarella cheese, each 3x3 inches, cut diagonally into halves

Rinse frozen broccoli under running cold water to separate, drain. Mix hamburger, eggs, bread crumbs, catsup, milk, 1/2 teaspoon salt, the pepper and oregano. Past hamburger into rectangle, 12x10 inches, on piece of aluminum foil, 18x15 inches.

Arrange broccoli on hamburger mixture to within 1/2 inch of edges; sprinkle with 1 teaspoon salt. Arrange ham on broccoli, roll up rectangle carefully, beginning on 10 inch side and using foil to lift. Press edges and ends of roll to seal.

Place on rack in shallow roasting pan. Cook, uncovered in 350 degree oven 1 1/4 hours. Overlap cheese on top; cook just until cheese begins to melt, about 1 minute longer. (Center of meat loaf may be slightly pink due to ham.) Garnish with celery leaves of desired. 8 servings

Do-ahead tip: After rolling, cover and refrigerate meat loaf no longer than 24 house. Cook as directed except - increase first cooking time to 1 1/2 hours.

One of the recipes noted was the correct one and my friends sister is very happy to have it. I tried to print them all for her but could not because the printer---getting old---wanted to print 19 pages. I did the highlight as I should have but still too many pages.
I told my friend about DU and how to go about finding the recipes you kindly indicated. The result was a happy lady and possibly new members for DU. They never heard of us and were impressed with our whole web site.
Again, thank you. I knew someone would come through.
I'm going to copy the recipes and try this myself.
