As a vegan, one of the things I use often in soups, stews and many other dishes, is vegetable broth. It's simple enough to make from scratch, but it's very time consuming to prepare and then boil all those vegetables, then strain for broth. And it goes very quickly, so I end up making vegetable broth at least once a week.
I had heard about making homemade bouillion powder from nutritional yeast flakes, so I thought I'd give it a try. Here's my recipe:
- 1 c. nutritional yeast flakes (good tasting - some brands taste like ass)
- 1 T. onion powder
- 1 T. garlic powder
- 2 t. poultry seasoning
- 2 t. sea salt
- 1 t. basil
- 1 t. thyme
Whir it all up in a blender, and use about a tablespoon per cup of hot water. You can vary the spices - I just used what was on hand, and since I was making gravy I used poultry seasoning.
I was surprised at how good it tastes! I had just made it in a pinch, and it tasted even better than my homemade broth, very hearty.
Just in time for winter - soup weather!

(111,383 posts)Just make sure it's labeled "nutritional yeast," they produce all types.
That looks like a decent broth. I usually make mine out of potato peels, onion skins, wilted celery and carrots, and anything else I can clean out of the fridge.
Red Star yeast is also quite nice on popcorn if you like cheesy corn.

(7,349 posts)Then I discovered they carried it in bulk at Freddie's - and it tastes as good. But Red Star is a good brand. Pretty cheap too.

(111,383 posts)It didn't work for that but it was fun watching the cats try to lick it up without sneezing their fuzzy little heads off.
It's what we used to use to give cheesy flavors to veggie things in the bad old days before decent veggie cheeses came out.
