Some advice needed about beans.

About ten days ago I soaked a substantial amount of black beans overnight then drained them and put them in the fridge. For various reasons I was not able to cook them till now and I wonder if they are safe to cook. I have rinsed them off as they were slightly slimy but they have no odor. I hate to waste so many beans.

I'd hazard a guess that if you kept them cold they didn't spoil. Plus I think they would smell bad.

..... they would be safe even if you left them out at room temps for that period of time.

Although I'm just not sure how the long term fridge stay will affect the cooking and taste qualities.

In most of my favorite bean recipes, the beans are a lot less expensive than the other ingredients.

So to make a long story short........ I don't know. But please keep us advised on what you decided to do and how it turned out.

The slime indicates some fermentation has taken place but if it smells good, chances are excellent that it's edible once it's dead. After all, they eat fermented black beans in Asia and I've had them here, they're delicious. Just wash them before cooking and send the bugs down the drain.

Cooking will also destroy many toxins. Even botulin toxin is destroyed by 5-10 minutes at a boil.

Of course, you might get them cooked and find they have an objectionable flavor. In that case, toss them out and mark it up to bitter experience.

And if you get yourself a pressure cooker, you need never soak them again.
