I have the Barefoot Contessa's new cookbook. Wow, is she talented! (Ina Garten).
Anyway, she has a beet salad in there with oranges that I might try tonight.
Also, lemon-grilled chicken.

(24,146 posts)i put them in my beef stew and just ignore the fact that it comes out purple.
not sure what we're eating tonight, i'll be home early enough to cook, but the cupboards are pretty bare. i'll probably just do pasta with onions, garlic and peas. there might be a bell pepper hiding in the back of the fridge, too.
i can tell you it's sushi for lunch, so i might have some left over.

(24,370 posts)I was thinking of doing a picture thread on this, but it is the first time I've made them in almost ten years, so I decided to see how it went and do a pic thread next time.
Basically, a meatball mix with rice.
Most recipes I looked at were very plain on the herbs, so me being me, well.....I just couldn't have that!
About 1/3 pound each of ground Veal, Pork and Beef, mixed with 2 eggs, one small onion finely diced, about 6 good sized mushrooms minced fine and sweated down beforehand, about a good cup of cooked rice, and herbed up with Rosemary, Thyme, Sage, minced garlic, and a little cumin. I added a splash each of Balsamic, olive oil and Worchestershire.
It was a pretty wet mix, but it went in the cabbage leaves just fine.
I steamed the leaves for about 10 minutes or so before rolling.
A mix of 1 can tomato soup and one can diced tomatoes for a sauce, added S & P, garlic powder, a TBS of sugar and a dash of red wine vinegar.
It's on the stove now, simmering away.
Should be OK...we'll see.

Tonight -- chicken and refried beans with chipotle salsa and some homemade salsa my landlord gave
me (she got it from a friend who told her that it was extremely hot), guacamole and sour cream.

(50,130 posts)....with olives, scallions, cheddar, black beans, olives, green tomatoes, salsa verde, and some green enchilada sauce. Oh, and white corn tortillas.
Serve with avocado slices and lime wedges.

Big disappointment today. Went to Popeye's for what will be my last indulgence for awhile and they screwed up my order. They gave me chicken strips instead of pieces of chicken.
