This soup came out well: Curried Potato Bean

1/2 onion chopped
3 cloves garlic chopped finely
2 med carrots diced
2 ribs celery chopped
2 med russet potatoes 1/2 inch diced
2 cans navy beans drained and rinsed
2 Tbs curry powder
salt to taste


saute onion and garlic till soft
add celery and saute
make paste with curry powder and a little water add to onion mixture and fry a little
add carrots
add potatoes
add beans
add water to cover and bring to boil
simmer 1 hour

Simple but good. Vegan. Try it!
