Meatloaf recipe

Glaze
1/2 c chili sauce
1/4 c brown sugar
4 t cider vinegar

Meatloaf
1 onion chopped
2 garlic cloves minced
1/2 c milk
2 eggs
2 t Worcestershire sauce
1/2 t pepper
1/2 t thyme
dash hot sauce
1 pound ground chuck
1 pound ground pork
2/3 c panko bread crumbs

Directions
In a small sauce pan, combine ingredients for glaze. Set aside. In a frying pan sauté onion and garlic until soft. Set aside to cool. In a large bowl combine milk, eggs, Worcestershire sauce, thyme, pepper, and hot sauce. Add onion and garlic. Then add meat and bread crumbs and combine thoroughly with your hands. Form into a loaf and place in a buttered 5x9 pan. Top with glaze and bake for one hour at 350°. Let cool for 20 minutes. Heat remaining glaze and serve with meatloaf.

World's Easiest Meatloaf:

Ingredients:

3 lb ground chuck
1 one pound jar mild salsa
2 cups cracker crumbs (Cheez-Its work best, Ritz second)
1 egg
Preheat oven to 375 degrees.

Mix all ingredients in large bowl. Form into loaf shape in a 9x13 pan.

Bake, uncovered, for one hour and ten minutes. Let stand at least 10 minutes before slicing and serving.

Serve with macaroni and cheese or scalloped potatoes for a side dish.

Yield: enough for dinner and two days' worth of sandwiches.

And mayo on the sandwich later. I love a good cold meatloaf sandwich. One of my friends just made cowboy meatloaf she found on pinterest. It had a lot of barbecue sauce in it so it did taste 'western'. It was covered with garlic mashed potatoes, infused with French fried onion rings, and topped with cheese, & broiled. I wasn't that fond of the meat part but the topping was mmmmm, mmmmm, good!

My Grandfather made a burger with two thin patties enclosing chopped onions, shredded cheese, mustard, and a dash of Worcestershire sauce. My meatloaf recipe is an adaption.
Meat as usual. When putting in pan, use two-thirds of the meat, leave a trough in the middle for the 'stuffing'. Last third of the meat, on top, join the edges, so the cheese juice stays in the meat, instead of running down the sides. My lady uses a glaze made of equal(?) parts brown mustard and Ketchup.
I grew up on Blind Aid and Welfare in rural Louisiana, and 80-90% of the flesh we ate came from the woods and streams in the area (My Dad spent 5 years trying to teach my mother how to cook an acceptable Squirrel Jambalaya, before giving up and doing it himself. Ground Beef was somewhat of a luxury.

I love recipes containing ingredients that I am likely to already have in the kitchen. Nothing puts me off of a recipe faster than listing things like Mango Chutney or Rose Water.

Yesterday I threw in some Italian Sausages, onions, bell peppers, some leftover veggies from the refrigerator, Rotell canned tomatoes and a few spices into the crock pot right before I left for work. When I got home my husband had already made up some brown rice and we had Italian Sausages and rice for dinner and I didn't have to make an extra trip to the grocery store.

What in the hell is that and what is it used for?

I'm with you. That's the quickest way for me to shut down a recipe if it calls for some weird thing that I don't have, have never had, and never will see in a normal grocery store or local farmer's market.

I add finely chopped onions, celery, green bell peppers and sometimes mushrooms WITHOUT sautéing first. They cook fine and add a great texture to the loaf.

I do not use garlic in the meat mix....... but I use a 1-2 sriracha/ketchup mixture in the meat mix with the same mixture on top used for a glaze.

Ketchup is my favorite condiment for warm meatloaf.... but I also love meatloaf with yellow mustard or brown gravy.

One meal hot..may be a baked potato and some broccoli.

The best sandwich for me is cold meatloaf w/ketchup. Other than on a meatloaf sandwich, I have not used ketchup in 30 years.

Most recipe's call for too many ingredients and too much meat for me. I cook only for myself and prefer to make a smaller loaf to be used as one meal and maybe a couple of sandwiches.

A good meatloaf is an art form.

1 lb. lean ground beef
1 egg
1/4 c milk
1/3 c chopped onions
2 tsp Worchestersire
1/2 c dried breadcrumbs
1/3 can tomato soup

Mix all together and place in loaf pan. Cover tightly with foil and bake 1 hour at 350. Uncover, drain off fat and bake 15 min. Then top with:

The rest of the can of tomato soup, mixed with 1 tsp worchestersire & 2 tsp brown sugar
Bake another 15 min.

1 lb ground chuck
1 lb ground pork
4 sweet italian sausages
1 cup onion finely chopped
1/2 cup celery finely chopped
3 cloves garlic
1/4 cup finely chopped parsley
1 cup stale french bread bread crumbs soaked in 1/2 cup cream
1/2 cup dried mushroom reconstituted in hot water and minced
3/4 to 1 cup red wine
2 eggs beaten
3 slices bacon

salt, freshly ground pepper, 1/2 tsp freshly ground nutmeg, 1tsp worcestershire sauce

saute onions and celery add chopped garlic in last couple of minutes

Mix all ingredients except for bacon, form into a free form loaf on a rimmed baking pan lined with parchment paper and place bacon strips lengthwise on top of loaf

bake for about an hour in a preheated 350 oven

I like to serve this with either a red wine sauce of a mushroom sour cream sauce- the latter is easier. sides of garlic mashed potatoes and spinach are good.

other than the bacon, that sounds delicious! I could probably do without the sausages too, but the sour cream sauce on it sounds delicious.

Do you have a recipe for the mushroom sour cream sauce?

and, btw, omitting the sausage is no problem. You could add a bit more ground meat or bread.

Mushroom Sour Cream Sauce

in 1 tbs of drippings from the meatloaf, saute 1/2 cup finely chopped onions, 2 cloves garlic and 1/2 pound mushrooms of choice, sprinkle with 1 tsp flour and saute for another minute. Add 1.5 cups sour cream and a couple of dashes worcestershire sauce. Turn off heat and add 1/4 cup finely chopped parsley
