2 cucumbers
1/2 c. minced red onion
1/2 t. salt
2 t. sugar
1/4 c. cider vinegar
1/4 c. minced cilantro
Peel and quarter the cucumbers. and then slice thinly.
Combine everything in a medium bowl and mix gently. Cover and let marinate in the refrigerator for at least 4 hours.
You can add a minced Serrano chili to this if you want some heat.
Serves 4-6

I'm definitely going to try it. And this is Arizona --- of COURSE I'm going to
add at LEAST one minced Serrano chile to it. We add hot chiles to everything
from burritos to beer to ice cream.

It may account for the slightly crazed look so many of us have in our eyes.

Then again -- that may be caused by other factors... and the chiles help calm
us down.

(35,685 posts)Resident Gourmand returned from France (SIAL Show) today and read my mind, as he so often does. I was driving to work and went past Five Guys and said, man, I wish Jim would suggest going to Five Guys for burgers tonight.
Instead when I arrived home, he had gone to the store and then made burgers with all the fixin's--including my fave topping, sliced hot peppers! Instead of a roll, though, flatbreads. I admit it was better that way. And he said he thought of Five Guys but rejected the idea to make burgers at home.
Also homemade French fries, too.

(106,886 posts)I've had it blended, cold on baguette as a sandwich and coarse, warm in a small pot pie. This was in Montreal. Love them.

i've never been to montreal, but my husband has a buddy up there and i hope we can go visit at some point.
