1. More stuffed red bell peppers. Yet, this time, I can doctor them up.

Really nice gesture from a friend who was over to watch some of the Red Sox game yesterday. Yet really bland. Still have 2 on hand. So - I'm going to split them open, lay flat on a broiler pan, add sliced mushrooms, red onions, worcestershire sauce, some salt & pepper, grated cheese. Broil till toasty.

Making homemade sauce for lasagna right now but was planning freezing for Maddie. Ight just go with another chopped salad and some chicken soup.

Pretty much follow this but instead of canned using fresh plum tomatoes and fresh basil in place of oregano. Might add a pinch of sugar depending on taste.



1/4 cup olive oil
1 onion, finely diced
1 bay leaf
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
2 garlic cloves, roughly chopped
2 teaspoons salt or to taste
2 tablespoons tomato paste
Two 26-ounce boxes Pomi Chopped Tomatoes or two 28-ounce cans whole plum tomatoes, chopped with their liquid

Doing a double batch. Will freeze half just tomato sauce and will add browned sweet Italian sausage and lean ground beef to rest for the lasagna.

6. Sounds solid. I like to do 50/50 hot and sweet Italian sausage with all the rest.

10. Simple finger food bite for a starter - tortilla / cream cheese roll.

Large flour tortilla
Cream cheese
Lime juice
Chives
Basil
Tarragon
Cumin
***********

Everything at room temp.

Lay out the tortilla and coat with lime juice. (I use my fingers), set aside.
Dice the chives, basil and tarragon. (I use chives as the main item, just a bit of basil and tarragon).
Spread cream cheese evenly over the tortilla.
Top with the diced herbs.
Roll up tight to about a 2 inch size roll. (I go slow and steady on this 'cause I flub this step a lot).
Chill in the refrigerator till "solid".
To serve - slice the roll into hand friendly rounds, dust with cumin. Paprika works as well.

These go great with a guacamole / salsa / chip plate.

16. What's great about this is you can add, delete, change herb mix. Cream cheese is a good simple base.

tonight and we ate earlier than usual. Looks like he will be driving home in a snow storm. We're under a snow advisory for lake effect snow. I am not ready for this.

I hate driving in snow storm. Done enough of that in my life.

I'll tuck my fleecy blanket up a bit. Brrrr.

Soup for an appetizer.

A gorgeous green salad made from romaine that I bought at the Farmer's Market this afternoon. This romaine is so beautiful and fresh it makes my heart palpitate!!

With a zucchini casserole as the veggie. It's in the oven now and smells delish! It's just me, so I'll be eating it for days (but that's ok).
