To take to a friend's house tomorrow. It seemed a bit hotter than I thought it would. I might add a bit of sour cream or condensed milk for those who don't like it real hot. We"ll see.

It has ramen in it, so I don't know how it will heat up. Backup plan is cheese and crackers.

After visiting the local grocery store, I realized that I was going to have to change the way I thought about food.

While you can find imported products here, they are, of course, much more expensive.

Some fruits and vegetables are easily recognizable, but many are not familiar to me.

And the meats are cut very differently, so much so that I don't really know what they are.

So, I found a great cook and downloaded it to the iPad. It calls for ingredients unique to or common in Mexico.

Last night I mad Ensalada de Rajas, Papas Y Salchicha (Roasted Poblano-Potato Salad with Sausage) and Volteado de Pina en Sarten (Pineapple Skillet Upside-Down Cake). Both delicious.

Tonight I am going to make Crema de Elote con Jamon y Poblano (Creamy corn soup with Ham and Poblano) and will serve it with some local cheese.

There is a big food festival here on Sunday which I could not be more excited about. It will give me the opportunity to try lots of local things that I am not familiar with.

What can I say, fellow foodies? I feel like I have gone to food heaven.

The food festival will be great and I, for one, would love to hear about it!

Your two new dishes sound delicious, too. What a wonderful way to expand your horizons.

I was worried we wouldn't hear from you in awhile, so happy to see you posting!

I'm having the lamb I didn't cook last night. I made soup and it turned out to be so delicous I had (hangs head in embarrassment) 7 cups of it. Yes, 7 cups of soup!

Eh, it was mostly vegetables, so not the end of the world.

So tonight will be lamb with garlic and rosemary. French fries. Tossed green salad with homemade vinaigrette.

Will post a report on the food festival after I go.

Our internet connection is spotty and there are so many new things to do, so I don't plan to be on DU as much as I was previously, but I can't give it up completely.

7 cups of soup!?!?! Wow. But I understand. I get full quickly but not when I eat soup or cheese. Not sure why that is.

Oh, and I could have had more of the pineapple upside down cake.

Those sound great. Have fun on Sunday - that ought to be good.

(I get it about meat cuts. I had Mexican neighbors who butchered their own livestock. Nothing looked like the supermarket meat aisle.)

Learning how to ask for things in kilos and make the conversion from pesos.

The meat is going to take some "learning".

I can probably get some picture up from the festival if I remember to charge my camera (which I am going to do right now).

I made the cake with a perfect fresh pineapple and it was the best I have ever had.

a casserole with broccoli, leftover chicken, rice, carrots, cheese and the kitchen sink, and homemade biscuits.

Oh, and I put a dash of stuffing mix in the leftover fest casserole. So far, it has been devoured by the family and there probably won't be much left. A drop of chicken broth and some thyme, and I have people asking for seconds. And thirds.

I made a dinner out of left overs and the family acts like I created sunshine. It was kind of good, but it was just a bunch of things thrown together that go together into a casserole, and baked for an hour. I make some biscuits and kale, but hell, the casserole was either delicious or everyone was extra hungry.
