I am having leftover burnt spinach pizza!
As I mentioned in another thread my pain level has been off the charts this month and I just couldn't quite get back to the oven in time.
Luckily, the bottom of the crust was nice and golden brown and I could see the spinach hadn't burnt, but the cheese was a really REALLY dark. Burnt dark. Fortunately it still tasted awesome (i like to brown my cheese a bit anyway!) so I tried a slice and it was workable!

(15,090 posts)If it were that bad, you wouldn't be planning leftovers. My husband tends to prefer his pizza overcooked and claims that the cheese tastes better that way.
I have no idea what we're having for dinner tonight. I have some kale to work with, though, so probably something with kale.

I bought what I think is a thin cut of flank steak, but I'm not certain. We shall see.
Report on the corn soup: delicious but very sweet. The corn here is different and seems to have much more sugar.

The plantains were a perfect side.

(146,218 posts)They were very ripe and sweet, so the combination of flavors was the key to the dish.
Very yummy. And they are super cheap so will likely become a staple around here.

(31,170 posts)I've yet to make good plantains at home. Had some in a restaurant that I loved, but here in the mountains, we don't get the best variety of produce...

(31,170 posts)We usually make our own dough, but I haven't felt up to it lately, and you can do some great doctored versions with frozen or local pizza shop options.

(39,961 posts)I added some chicken broth, cooked bacon, onion, celery and carrots to it. Along with seasonings, of course. I cooked it about an hour. It's a good soup consistency . All it needs is a little corn bread or some biscuits to go with it (and it's going to be corn bread because I'm not in the mood to make biscuits).

Ingredients
1 salmon filet, with skin on
2 T butter
3/4 c panko bread crumbs
2 T beaten egg
2 t dried thyme
1 t dried tarragon
1 T Dijon mustard
1 1/2 T mayonnaise
lemon wedges
Directions
Dissolve 5 tablespoons salt in 2 quarts water in a large container. Submerge salmon in brine and let stand for 15 minutes. Pat dry and set aside. Melt butter in skillet, add panko, season with pepper and over medium heat, cook until golden brown. Transfer to bowl and let cool. Mix egg and thyme. In a second bowl, combine tarragon, mustard, and mayo. Place salmon on a baking pan, skin side down. Spread tarragon mixture evenly over salmon. Sprinkle panko crumbs over fillet and press it gently to adhere. Bake at 375° for 20-25 minutes. Serve with lemon wedges.

(106,886 posts)Was out for a walk and saw folks setting up a big BBQ in the park by my place. Local non-profit mental health support group fundraiser.
The grill cook does one of the best barbecues in the area, a local ranching family. So, a win-win-win. Great organization to support, some great BBQ and a reasonable price.

(50,130 posts)My beloved Oregon Ducks play UCLA in half an hour. Then, before the Ducks game is finished, our MLS soccer team starts on another network. I hate it when they overlap.
So it's a supermarket broiler chicken for dinner, with a basil cream gravy. A wild rice pilaf and some steamed broccoli.
I didn't really plan sports food, unfortunately. My mouth wants a hot dog and sauerkraut.

(1,136 posts)I made a spiral ham last week, cut off all the meat except a bit and froze the bone. Poured the internet all week for soups to make with a ham bone. Ended up taking things from several different recipes and throwing it in the crock pot this a.m. OMG. It was DELICIOUS!!! My friend cam over for a bowl and declared it the best black bean soup she's ever had in her life. I don't know if I would go that far, but it was pretty darn good. Here is basically what I did, although the measurements were not precise:
Finely chop one onion and some garlic - as much as you like, recipe called for 2 cloves, I used 4.... Saute in butter.
While that is cooking, place the following in your crock pot:
Ham bone with meat bits left on in.
4 large cans of black beans (or soaked beans)
Salt
Pepper
1/2 can of chipotle pepper chopped.
Olive oil (about 2 tablespoons)
Add onion and garlic once cooked until translucent.
Put the lid on the crock, put on low and go about your business, stirring occasionally.
I cooked mine for about 8 hours on low. At hour 7, add 1/4 cup of either white vinegar or apple cider vinegar. I had white on hand, so that is what I used. Remove ham bone, but add any extra meat bits that you trim off back to the soup.
It was purely dumb luck how this came together and ended up tasting so amazing.
Served with corn bread.

The are delicious. They retain flavor, including garlic, salt and onion.
Don't judge us for the amount of beans we also eat.
