Nellie Frittata

Ingredients
2 slices prosciutto, finely chopped
1/2 onion, chopped
1/4 green pepper, chopped
1/4 red pepper, chopped
6 oz. shredded cheddar cheese
1/2 pound spaghetti, cooked
6 eggs, whipped
dash paprika

Directions
In a non-stick pan, cook the prosciutto until crispy. Remove and place on paper toweling. Add a bit of olive oil to the pan and sauté onion until translucent. Add red and green pepper and cook for an additional minute or two. Then add prosciutto, and spaghetti and heat pasta through. Mix in cheese and pour eggs over the pasta and thoroughly blend. Sprinkle a dash or two of paprika on top and let cook for roughly 5 minutes until the eggs set. Flip frittata onto the second pan and cook for another 5 minutes. Flip back onto first pan and cook an additional minute or two. Place frittata onto a pizza pan let cool for a few minutes then slice into wedge shaped pieces.
