I've been working on a veggie burger recipe for years, one that's got some moisture and a decent texture. this is pretty good, not dry and holds together well
1 can black beans, drained
1/2 can pumpkin
1 cup chopped onions, sauteed until golden in a little olive oil and cooled
1 cup mushroom, finely chopped, sauteed and cooled
1 medium carrot, grated
salt pepper and your choice of spices- cumin, chile powder, garlic powder
(not vegan but I added a tsp of worcestshire sauce
throw all ingredients into a food processor and pulse a couple of times or mix by hand and form into patties. cook over medium flame in a little olive oil
I'm not a vegan so I topped mine with a mixture I made of feta cheese whirred in the food processor with a little cream cheese, a clove of garlic and added chopped kalamata olives (I was in a greek food mood). I added sliced red onion, sliced tomato and a few spinach leaves as toppings. served it in a whole wheat pita.
You could flavor this any which way and use whatever cheese strikes your fancy. An all vegan topping could be spicy guacamole or just plain old ketchup.

(9,838 posts)veggie burgers because they are all glued together with egg white (have an allergy). It is a thrill to read the words "holds together well." After many failed attemps, I had given up. Your post gives me new hope. Many thanks for it.
