Panko crusted salmon with tomato relish

Ingredients
1 salmon fillet, skin on (approx. 1 1/2 pound)
1 c panko bread crumbs
2 T mayo
1 t garlic powder

Relish
1 tomato, diced
1 t balsamic vinegar
1 T olive oil
black pepper
1 shallot, finely chopped
1 clove garlic, minced small bunch of parsley, finely chopped

Directions
Rince salmon and pat dry. Coat the flesh side with mayo, then dip into panko/garlic powder. Bake on a cookie sheet for 35 minutes at 350° until lightly browned. While salmon is baking, combines relish ingredients in a small bowl (can be prepared ahead of time). When salmon is done, remove from oven, let cool for five minutes then top with the tomato relish.

I don't usually use mayonnaise for coating but I'm going to try that. Had a turkey one Thanksgiving that was lathered in mayonnaise and it was really good!
