2. Migas. Scrambled eggs, bacon, onion, tomatoes, jalapenos, corn, toasted tortillas, cheese, hot sauce

This is one Tex/Mex version. Bacon, onion, tomatoes, jalapenos and corn are sauteed. Then the eggs in the same pan. I add some cumin with the eggs. Scramble, turn off the heat, add tortillas crumbled on top with shredded cheese and fresh cilantro.

Basic, simple and tasty quick meal. Sometimes I side with sweet potato fries.

Spain, Portugal, Mexico, and the US Southwest all have a take on migas. Lots of variations.

Made a pineapple-honey-garlic glaze to pour over the top. I forgot how rewarmed chicken can dry out. It came out pretty cool.

Picked up this really good cheese at the farmers market. Going to carmelize some onions and add fresh tomatoes. I've got some leftover guacamole, some crema and the rest of the chicken in yellow mole.

Should be a great meal.

The Baja 1000 is going on right now. It's a big off road race with trucks, cars, motorbikes and really unusual looking vehicles. It's got the town pretty much shut down and much louder than usual, but people look to be having a great time.

Put on my nightgown about 15 minutes ago and considering not getting dressed tomorrow since I don't have to go anywhere.

Dinner tonight is a pork chop, baked potato and salad.

grilled mushrooms, peppers and onions with jalapenos, pickles, tomatoes and olives.

the cupboards are bare, bare, bare, bare because i haven't been an adult lately and haven't gone to the grocery store for a bit. i'll have to do it before i go to work tomorrow.
