(146,218 posts)I went to this really cool central market yesterday. The butchers and fish mongers and small fruit/vegetable growers gather there.
I got some beautiful looking pork and lots of fresh produce, all for "coconuts" as the gringos say down here (that is, very, very inexpensively).
I am going to make an anchiote/lime juice paste, wrap the pork in banana leaves and cook for a few hours in the oven.
Will serve with roasted potatoes and a salad.

I'm not sure I understand the purpose of the banana leaves. I guess they kept it from sticking to the bottom. Maybe they absorbed the fat, because there was very little.

over basmati rice. (I bought some cut-up bone-on stew lamb today.) This will be a first... wish me luck!
Edit: I just realized I didn't have any rice in the house. So, it's lamb vindaloo (spuds, spice curry and red vino) instead!
Note to self: put rice on shopping list!

I went to a dinner party where we all decided to cook a style we weren't familiar with. So, we decided on Moroccan. By the time we served it up, it was more Middle Eastern than Moroccan. We all laughed, because it morphed into things we knew how to cook - completely defeating the whole point of the night!!
Your menu sounds like that night we had.

(35,764 posts)Salad with lettuce greens, hard-boiled eggs, scallions, green pepper with honey-mustard dressing and chopped turkey bacon and chow mein noodles on top.
Maybe some baked apples and raspberries with a little balsamic drizzle on top.

Triple batch of chex mix in the oven, half of it with no nuts because twin toddlers have peanut allergy. Making doughs for three cookies that need to be chilled before shaping. Apricot rugelach, cocoa icebox, and zaletti, an Italian cookie flavored with rum-soaked currants and orange. Also making whole wheat banana bread, some home-made cinnamon rolls, some benne (sesame) cookies, buttermilk chocolate brownies, thin rosemary breadsticks, and cranberry cookies. All to be finished before Saturday morning, because the college senior will be coming through town on Amtrak, with half an hour layover here. I will meet him at the station with bags of goodies, and he will continue north to family bearing all this stuff.
The twin toddlers' mom has little time for baking. It works for me. I love to bake.
Oh, tubs of peach freezer jam and orange marmalade are going along, too. Let's hope the train isn't delayed so the passengers can disembark for the layover. Heh.

(2,012 posts)I was pleased with myself that I got Christmas sugar cookies (not very well decorated), pecan tarts, and dates stuffed half with peanut butterand half cream cheese in time for a get-together.

(24,146 posts)i didn't like how the chili i made yesterday came out and i don't have the energy tonight to doctor it. i'll see what the husband says, but i'm sure he'll go for it.
i'll get my normal of extra spicy seseame chicken and hot and sour soup. the dinner special comes with an egg roll and cream cheese wonton, too. i'm hungry tonight.
