I've been accumulating frozen tomato paste and need to use it up. Plus I'm almost out of ketchup.

as in how much of my budget is eaten up by basics. i'm thinking roasted acorn squash and wild rice for sure since i have that on hand, we'll see what the meat department holds.

edit: husband wants pork tenderloin, i'll try to swing that.

I went with 400, because 350 didn't seem enough. I added beef stock and onions to the roast along with stuffing it with garlic.

I like slow and low. I recently cooked my lamb roast at 300 for about 7 hours. That resulted in a scrumptious, falling off the bone roast.

But if you want something you can slice and want it to be medium rare, higher temps for shorter periods works best, about 30 minutes/pound. Would definitely use a meat thermometer if you do it this way.

I've got just the right amount of leftover lamb and some excellent tomatillos.

They sell corn on a stick down here. They put butter, mayo, chili powder and cheese on it. It's messy, but oh so good.

How about you?

We have some leftover ham from last week's sauerkraut ball production. I'll probably just cook it on my cast iron grill pan and serve with baked yams on the side.

Love those Trader Joe's dough balls.

I'm also making split-pea soup since it's supposed to be so cold in Chicago tomorrow and Tuesday.

and that is not anything funny cold for the Gulf Coast. I had to wrap my pipes and at my mom and dad's.

16 is very cold for the Gulf Coast, though. I'm not looking forward to it, but at least I don't have to go anywhere. It's been snowing since yesterday. Most schools are closing, too.

I have an oversized pie plate that I use.

one Trader Joe's pizza dough (I stretch it out to fit the pie plate)
1 14.5 ounce can diced tomatoes (drain the liquid)
oregano
sweet Italian sausage
mozzarella

Bake at 400 degrees until it looks done. Sorry, but the amounts and cooking time are approximate since I don't measure anything and just watch it in the oven.

LOL, it's been ages since I've had Uno's. Reason I'm laughing is that last evening a cousin posted from the Houston Airport where he and his wife had eaten what supposedly was an Uno's pizza with this Looked like no Uno's pizza I've ever seen. Guess it doesn't travel well.

Anyway, the crust browns but it's more rustic looking than professional. Tastes good, though, which is the important part.

Those crusts have a crunch that is difficult to duplicate.

Despite the chains and other places that claim to make it, I've never been anywhere that made it like Uno's (or Due's).

It's one of those foods I wake up craving.

Their crust may be somewhat different than TJ's, too. But, it ends up tasting great and that's what's important.

Pasta with cream sauce.

Tossed green salad.

Lamb roast and roasted potatoes.

Sauteed spinach and garlic.

Red wine--I see bottles of Rioja.

For dessert, lemon sponge cake with some type of topping.

The Resident Gourmand is back from Switzerland and he is cooking.

While dining, we are going to watch Lilyhammer on Netflix! Second season. Excitement!!!
