I like it when I have to make do. No lettuce, but I have a nice tomato for the sandwiches.

They call this a bacon butty in the UK and I am going to use butter and worcestershire sauce, which is traditional.

I just ran across this, which is pretty funny:

The Scientist's Formula:.

Four researchers at the Department of Food Science at Leeds University in the UK spent more than 1,000 hours testing 700 variations on the traditional bacon sandwich.

They tried different types and cuts of bacon, cooking techniques, types of oil and a range of cooking times at different temperatures.

A shortlist was then tested with computers to measure the texture of each sandwich.

Fifty volunteers also judged each sandwich according to its taste, texture and flavour.

The formula is: N = C + {fb (cm) . fb (tc)} + fb (Ts) + fc . ta, where N=force in Newtons required to break the cooked bacon, fb=function of the bacon type, fc=function of the condiment/filling effect, Ts=serving temperature, tc=cooking time, ta=time or duration of application of condiment/filling, cm=cooking method, C=Newtons required to break uncooked bacon.

a British comedy that I enjoy loves his bacon butties. Onslow (sp.? on Keeping Up Appearances) mentioned his fondness for them quite often and I never knew what they were. Thanks for the enlightenment!!

PS: What a great event that bacon judging event must have been. Would love to have been there!

Slow Cooker Calypso Pork Chops

6 meaty bone-in pork chops
1/2 cup water
1 can (20 oz) pineapple chunks
1/4 cup brown sugar
1 tbs soy sauce
1 tbs cider vinegar
2 tsp curry powder
1/2 tsp ground ginger
1/4-1/2 tsp red pepper flakes
1/2 cup water
2 tbs cornstarch
oil for browning
2 green onions, sliced

Heat a heavy skillet over medium-high heat. Add oil. Brown pork chops well on all sides. Remove pork chops from pan. Add the 1/2 cup water and scrape up all the burny bits in the pan (deglaze). Reserve liquid and drippings.

In a medium bowl, mix entire contents of pineapple can (juice + pineapple chunks), the reserved liquid from the pork chop pan, the brown sugar, soy sauce, vinegar, curry powder, ground ginger and pepper flakes. Mix well and pour into the crock of a 5-7 quart slow cooker.

Place pork chops on top of sauce. Cook on LOW for 6-8 hours or until pork chops are tender.

Remove pork chops to serving plate and cover with foil to keep warm, preferably in a warm oven.

Mix the cornstarch and 1/2 cup water. Add to juice in slow cooker, stirring while adding; stir well. Cover slow cooker and cook sauce for 15 minutes.

Ladle sauce over pork chops. Top with sliced green onion.

I bought a foccacia today at the grocery store and it already had red, green, and yellow peppers on it. Onion, too, plus, of course, tomato sauce. I added mozzarella and sausage and it's in the oven now.

Salad with spring mix.

Dessert, if I'm still hungry, would be blood orange sorbet.

Yippee, I'm doing the Happy Dance 'cuz I'm on spring break this coming week! I plan on cleaning out my kitchen shelves.

it's pureed pea soup tonight and pureed black bean soup tomorrow, and random mashed potatoes, mashed bananas, applesauce, and ice cream to fill in the rest of the meals over the next couple days. We'll see if he's up for pureed mac and cheese for our big Sunday night dinner.

....crispy bacon slices, caramelized sliced crimini mushrooms, chopped fresh spinach, diced red onion, a dash of nutmeg, half and half and eggs, grated parm, and a grating of nutmeg over top.

Served with a small chopped salad with red-wine vinaigrette.

Nom nom.

10. mac and cheese

from scratch. was going to do rice and beans, but we're out of rice. did cous cous and veggies last night. didn't want to prep veggies for pasta. it was just about the only option left, but it'll be tasty.

not going to bake it through, i'm hungry.
