Pasta with chicken, caramelized onions, and roasted red peppers

http://cookingwiththemark.blogspot.com

Ingredients
4-5 leftover barbecued chicken thighs, or basically, a bunch of leftover chicken, chopped
1 onion chopped
1 roasted red pepper
1 cup white wine
1 cup chicken broth
1/2 pound pasta cooked (I prefer angel hair)
Black pepper to taste
Plenty of grated parmesan

Directions
In a large frying pan, sauté the onion until it's caramelized. Then add the red pepper, wine, broth, finely chopped chicken, and black pepper. Cook for a few minutes while cooking the angel hair pasta. When pasta is cooked, drain and fold it into the chicken/broth mixture. Serve with parmesan.
