I've got a little lettuce, tomatoes, avocado, ham, cheese, sprouts, carrots and peppers.

Going to chop it all up and dress it.

DH likes a vinaigrette, but I prefer a creamy dressing, so will need to work on a compromise.

No croutons, but I have crackers and tortillas. I might just roll mine up in a tortilla.

Now, I will return to thinking about going swimming. Very, very lazy today.

3. Soup and salad

I'm marinating lots of delicious, colorful vegetables for a few hours and then serving them over tossed greens. I have tiny little green beans (so tender! People always ask what I'm doing by picking out all the tiny beans), yellow and red peppers, green onion, roasted cherry tomatoes, and cukes. Avocados, too. Some of the vegetables I intend to blanch.

My soup is made with tortellini. It has a base of vegetable broth with carrots, onions, and potatoes. Also has some crema Mexicana, milk, and shredded cheddar cheese in it. Turkey bacon bits sprinkled over the top.

Definitely not a (heart-healthy) soup to have very often, but nice on occasion. It's cold here tonight, so soup is going to hit the spot.

in crunchy taco form. I thought I had a head of lettuce, but it turned out to be cabbage. So, I'll have it with shredded cabbage, tomatoes, sour cream and hot sauce. Not sure if I want to add shredded cheese on pork. I guess it depends on how many beers I have tonight.

I think the saltiness of the Vermont cheddar might just work.

I do like cabbage, but when it comes to tacos... I usually associate tacos with cabbage & fish. No bother. Veggies are veggies, so long as they are fresh.

(Yikes - watching "Shawshank Redemption"... Brooksy just said goodbye... Love the movie, but also hate it. I like that Hollywood got it right on this movie.)

OK, popcorn time. With a li'l cheyenne pepper.

It was warm, sunny, and lots of folks were happy to be outside after a long, cold, wet winter. The downtown area was fragrant with the smells of smoked pork, beef, chicken and other specialties. There were competitors from all parts of NW Georgia, including Marietta and N. Atlanta. I was volunteering for a Friends of the Library Book Sale and didn't get to scope out the whole downtown area, but I was able to get a plate of delicious chopped pork BBQ with sauce, plus beans and slaw to-go and share with an elderly friend. The pork and beans were delicious. Didn't get any of the slaw!

Think I'll just snack for supper tonight.

Street food is the best food in the world, imo.

Glad you got to enjoy some of it and glad GA is coming into spring.

a woman selling tamales, although I didn't see her. (I'll bet she sold all of those tamales and had to close up early.) THIS IS PROGRESS for my little redneck town!

Made my first 'from scratch and healthy' Cesar dressing - with zero fat yogurt. It was super good. We didn't just use romaine either - we put in spinach and sprouts (and I had tomatoes too). Also homemade croutons. The kids thought it was fabulous, which made me happy since it was so simple and healthy.

I never did until I discovered anchovy paste in a tube. Perfect for Caesar Salad dressing.

The kind from a tin. I've never seen the paste in our stores. I just used the canned kind and put them in a blender with the rest of the ingredients

The whole anchovy makes me queasy, but, for reasons I am sure are purely psychological, the paste tastes great to me.

Plus, I hated to open a can and be left with most of them unused. In the fridge? I don't think so.

And they even know what it is. And they watched me make it.

I know, I hate throwing away the rest as well - and yeah, they don't keep well in the fridge (plus then I forget they are there, because I use them so infrequently, LOL).
