Need advice about baking with a convection oven please

just got a new range today it has a convection oven, which I have no experience with any advice about baking times/temps as compared to a standard oven would be greatly appreciated

But that's kind of "wide". It depends on what you're cooking; Roasting meats may need to be covered with a sheet of aluminum foil to keep the surface from drying out.

Baking can be done, if there is a separate setting for 'convection bake.' this is usually a lower fan speed than the 'regular' convection setting. Sometimes putting a hallow pan of water on the lower rack of the oven helps to keep the crusts a bit moister.

When you use it, take notes if something comes out good (or bad).

A digital thermometer is really helpful. One of the ones that has a probe on a long lead to an external readout is very helpful when roasting, you set it to beep at a certain temperature. You can keep from opening the door and cooling off the oven (and heating up the kitchen).

Remember to 'rest' your meats. Take them out of the oven a few degrees early, and allow the heat from the outside of the piece to work its' way to ward the center. This also lets the juices redistribute, so they don't run out as soon as you cut into it. Leave the probe in the meat while resting, or it will spout like a whale when you pull it out too early.

On the first Thanksgiving after we got ours, my wife came home from work at 4:00. The turkey was just going into the oven. She thought we weren't going to be eating until around 10:00 or 11:00. We sat down at 7:30 to a rested, carved, perfectly done bird with all the requisite accoutrements.

I do the Thanksgiving cooking. She's a nurse, so she only gets one of the Holidays off, while I get them all. She has a spinach salad that is 'hers' to make, so I've got things cleared out for her to do that.

sometimes your convection oven will automatically adjust the temp. The one I had, if you pressed into the screen 'bake 350 degrees' would turn on to 325 (it was a computer type console). So no need to put in "bake 325" if you want 350, because then you'd get 300. LOL.

You can set the temp 25 degrees lower, but baking time will be the same.
