What's for Dinner, Sun., June 15

Chinese. I love it because it's mostly vegetables. In fact, I usually double the vegetables and the sauce. I'm making two dishes:

--Mu Shu Pork

--General Tso's Chicken

Also, to go with the above, "cauliflower rice." This is actually grated cauliflower that people on low-carb diets can make to go with their Chinese.

I'm making two dishes because it's supposed to be warm and humid this week and I may not want to cook. It's so nice to be able to have cold Chinese on such days.

I still have a bunch of Napa cabbage, bean sprouts, mushrooms, beef stock, ginger, garlic, rice noodles.

So... time for soup again! With a little jalapeno to spice things up. I have 4 oz of filet mignon to sear, then sliced thin and let it sit atop everything in the bowl.

Yep - I love me some asian-inspired soup.



ps: I want my ovens back, please. One more day...one more day...

I love Cauliflower rice ... we usually just use a potato masher
after we cook the cauliflower ....

Is the cauliflower rice just grated raw? Do you add anything to it? Sounds like a great dinner .

Sadly, even though it was Father's Day, Dad ended up giving me money to shop, so I at least made sure I did dinner for him and mom as well, grilling lean stew beef, bell pepper and vidalia onion.
