What's for Dinner, Sun., June 22, 2014

Not sure here, but I will say one thing. This low-carb diet is a lot of work because I spend so much time processing vegetables--washing, chopping, etc.

But it's a great diet and easy to stick to because a) there are relatively few restrictions; b) I can have my glass of wine at the end of the day.

Now I would like to comment on cbayer's delicious cucumber soup. Very tasty. This will be a summertime staple for me, I can tell!

I did drizzle a little bit of heavy cream on top, but other than that, made it just like suggested.

For a variation, next time I will sprinkle mint on top.

1. Garlic Scape Pesto on Brown Rice Penne

With a side of fresh sugar snap peas. I am excited, it's my first time using garlic scapes. I bought it and them and the sugar snap peas at the farmer's market yesterday. Scored some honey from her, too.

Anyone have experience with scapes? I have enough to try some hummus as well.

It's called Your Decatur Farmers Market.

It is enormous and under one roof. They have the most amazing array of produce, meat, fish and bread I have ever seen in one place.

Anyway, I have an excellent filet from there which we will grill tonight. Along with a spinach salad and some egg noodles in fresh chicken broth, we will have a feast.

And we are going to have a bottle of champagne because I quit smoking today.

4. Stuffed bell peppers.

I'm looking at fillings - probably rice, bacon, cherry tomatoes, diced squash, chilies, shredded cheese. Broiled.

The peppers are baseball size, so it'll be like 3 stuffed bell pepper sliders for a meal.

now they are on the smoker
going to roast some eggplant and garlic for a side dish

Tossed salad.

A Moosehead beer.

Dessert, 1 pc. dark chocolate with chiles in it.

in sad little leftover hotdog buns. Green beans sauteed in butter and balsamic vinegar (yay, it took an 18 mile bike ride, but I have veggies again!), and fresh melon.

9. There were 10 of us for family Sunday lunch and a good amount of our meal came from the garden.

We had squash with corn, peppers, tomatoes, blue lake green beans, cucumber/tomato salad. We also had brats and mashed potatoes, a fruit plate and bread.

Our zucchini and patty pan squash plants and cucumbers are really putting out and we just picked our 1st picking of green beans. We should be getting Roma and other tomatoes very soon. Blackberries & blueberries should be ripe around the 4th of July. Yum, yum.

but I had two small tomatoes from my patio tomato plant. Got it at Costco and put it out after the Mother's Day snow; has 20 tomatoes on it which will make each one cost about a dollar! The still don't taste quite like Indiana tomatoes from the victory garden but a real treat after Safeway's.

12. chicken legs Korma with chick peas and zucchini

.....and rice, and a tamarind chutney. Okay, the Korma sauce was jarred, and the chicken left over from last night's big chicken. Seriously, the chicken was truly succulent after being simmered for an hour in the sauce.

Dessert: fresh raspberries with whipped cream. Farmer's market day yahoo!

I was at my nephew's to celebrate his stepson's high school graduation. Nice time.
