Lobster rolls

Ingredients
3 lobster tails (count on 1 1/2 per roll)
2 small sprigs of tarragon, minced
2 green onions, minced
a couple squirts of fresh lemon juice
2 T mayo
a pinch of sea salt
2 rolls, or slices of a baguette

Directions
Steam the lobster tails for 5-7 minutes. Let cool. Then split open and dice the meat. Put into a gown and add remaining ingredients. Mix thoroughly and cool in the fridge covered with plastic for 30 minutes. Just before serving, scoop out most of the bread from the roll or baguette, fill with lobster mixture and serve.

A lot of grocery stores have frozen lobster tails in the deli counter. Grab them when they're $5 or $6 each. I live in the Detroit area, so we may be luckier than some other folks who post.
