I have prepared eggplant stuffed with sausage and stuff. It's all ready to go in the oven when the time comes.
On the side, an apple and endive salad to balance it out.
We are going to visit friends tomorrow and I'm going to make some roasted leeks that will be served at room temperature with a vinaigrette, bread crumbs and some burratta cheese on the side. I might also make a quattro fromaggio pizza with truffles if I continue to have a cooking bug.
Hope everyone is gearing up for a fabulous weekend. The weather is perfect here and it just keeps getting more beautiful.

Of course frying is quicker and crispier. I'm from Kentucky, and Fried is our four main food groups. There's the fried in margarine, Fried in bacon fat, fried in lard, and fried in whatever is the cheapest vegetable oils like a generic Crisco.

i still don't feel much like cooking, so it'll be whatever i can scrounge.
i am going to brine a pork roast tonight, start it on the smoker in the morning and then finish it in the crock pot per the husband's desire. not much work and it'll feed us for the weekend.

And i had some leftovers, which I have carefully packaged for devouring at a later date.
I hope you feel better soon. I know how hard it is to be on the mend sometimes.

I feel like going very casual tonight and having a hamburger and fries, but it's not on my low-carb diet, so what do we do? We substitute!
I would rather have a veggie burger than beef any day, so I am using Morningstar Vegan Grillers, which I get at TJs. They are so delicious! If you've never had one, by all means, try them. They taste just like a grilled burger, and they're so easy to make.
Now for the fries: substitute zucchini fries!
Don't they look delicious? Recipe.
And cole slaw, with Chinese cabbage and red cabbage with a little pineapple and toasted almonds mixed in.
Then I'm going to sit here all evening and enjoy my Dateline and 20/20 crime shows tonight--plus sip on some wine!

I could make them at home, but they definitely are not available in local eating establishments.
Those zucchini fries look good but
.. I want the real thing.
We have no TV, but I listened to my two favorite radio music programs - David Johanssen's Mansion of Fun and Meg Griffin's Disorder in the House. Thank the muses for sirius radio and a decent internet connection.

(175,742 posts)Went to Portillo's (in pouring rain) to get a burger and fries. Ooooffff. I'll have some fruit later, either strawberries or cherries.

Marinade for salmon:
Soy sauce
oil
black pepper
garlic
brown sugar
Add lemon at end of cooking.
A hot skillet at the beginning will add some good caramelizing.
Braised Bok Choy:
Bok Choy
olive oil
water for braising
ginger
crushed red pepper
black pepper
Soy sauce.
lightly roasted sesame seeds (optional)
Slow cook in covered skillet

But in a few more days the local apples will be available at the farmers market.
