I have never heard of browning leftover meat loaf in a skillet. I must try that!

I did a Pork Roast in the Sun Oven this morning also potatoes wrapped in foil.
Already pulled it apart but it's way too early for dinner so it will all have to be reheated.
I'll make a salad too.

That will be dinner tomorrow night also AND I'll probably have another 4 or 5 meals with the leftovers to freeze.

Cook once, eat a bunch of times.

A most unlikely source!

A union committee I'm on meets once a month at a diner--a typical NJ diner. Everyone in our group orders something but the only thing I'll have there is the onion rings.

So they have these early bird specials and one night a colleague ordered the meat loaf special. The meat loaf was browned like I described above, and it looked so good that I wanted to order it. But if I ever told the RG I gave up one of his meals to have something at a diner--well, let's just say it wouldn't be pretty.

So eventually, as in tonight, I was able to indulge my "diner fantasy."

I only cooked a 1/2 rack the other day, and could only finish 1/2 of that because they were so meaty.

I still have some spud salad leftover too, and some broccoli I steamed up last night. So really, no cooking at all tonight, just warm up the ribs in the toaster oven.

Had broiled chicken with a sesame sauce, broiled broccoli, onion 'n garlic and rice. Now out for the stars, if that marine layer pulls back a bit.

We had a good antipasti platter and melon with prosciutto.

Then I taught them to make gnocchi, which we had with a wonderful blue cheese sauce. It's a challenge because the ingredients I have become accustomed to are hard to come by, but it was still pretty delicious.
