So, here I am. I just got done preparing black eyed peas for tomorrow. I first cooked this two weeks ago. I was going to look up recipes, but decided to wing it and liked the results. So, I take one pound of black eyed peas, two cans of chicken broth, a cup or so of apple cider, a bunch of cilantro coarsely chopped, 4 cloves of finely chopped garlic, salt pork, the juice of two limes, and water as needed. I just put the crock pot on low, should be ready by tomorrow. Then, I will do cast iron corn bread. I will post my recipe for that tomorrow. If I remember my flickr login I will post pictures.

(24,146 posts)if you're ever in the mood to try a new cornbread recipe, check out alton brown's. i add diced jalapenos to the recipe and grease the pan with bacon fat.

(34,582 posts)I finely chopped mint and garlic, put that in olive oil marinated for two hours. Then I put them on the grill for 7 minutes rib side up, then 7 down. They came out a nice medium rare after foiling for 10 minutes

Black eyed peas and cast iron cornbread make me so nostalgic of the south.

The cornbread was cooked in my 12 inch Lodge cast iron. Here us the recipe. I add a dash more sugar and butter. The shortening is for greasing the CI
Ingredients:
1½ cup of Cornmeal
1 cup of flour
½ cup of Sugar
2 tsp of Baking Powder
½ tsp of Baking Soda
½ tsp of Salt
1½ cup of Milk (or Buttermilk if you have any)
¼ cup of Unsalted Butter, melted (I use whatever I find around: oil, margarine, lard)
2 Eggs
¼ cup of Shortening
