I found a brick of ground beef in the back of the freezer. So, it's meatloaf day for me. With a baked potato, and corn on the cob.

In a week, I'll cross the country from SoCal to Rhode Island for the holidays, so I'm trying to eat my way out of the fridge of anything that is perishable. This week's menu plan will revolve around that fact.



EDIT: It wasn't ground beef when I just now unwrapped the foil. It was a 2lb chuck roast! So, pot roast it is!

I bought tomatillos and jalapeno peppers today. After your green chili thread, I can't get it out of my mind.

Best o' luck - I'll be making the same either tomorrow or Tuesday.

It's in an adobo and tomato sauce spiced with cumin, chili powder, garlic, onion and Mexican oregano.

Serving it up in around 4 hours on tortillas with cilantro, shredded cheese, sour cream, chopped jalapenos.

Not sure how I came to this conclusion, but I'll be baking potatoes for a side with all the usual toppings.

PF Chang's somethingorother that was on sale a while back. Still needing freezer space, so out it comes tonight.

The housemate made 'lime bars' that were pretty decent last night. Sort of shortbreadish, but glazed with a sauce using lime zest and lime juice.

I'm currently trying to figure out 'pinterest' and still not able to search up the housemate's page, even though she told me her useraccount name.

Pinned various pages of artsy types I know who make and sell neat stuff. The only surprise I got so far was when somebody sent a message saying I could pin them, or somesuch, and I accepted and an entire new already pinned 'board' just popped up along with the two boards I'd created. Oh, and I'm not sure how to get my original 'front page' back now, unless once you start making boards, those become your 'front page'.

7. salad, shrimp w/sesame noodles

Yesterday we had a Christmas party in my Saturday afternoon English class. Everyone brought something and while we were supposed to be having a final, we watched Office Space instead. Hahah, don't you wish you had me for your English teacher?

Well, anyway, that's a long way of saying that I made two big bowls of sesame noodles and a big bowl of salad for the party, but there was so much food that there was plenty left over.

To use up the sesame noodles, I made shrimp with broccoli and water chestnuts and then added the sesame noodles. YUM!

The salad is various greens with yellow pepper and shaved purple cabbage. Over that goes buttermilk ranch salad dressing topped with turkey bacon bits.

I'm enjoying a lazy Sunday, capitalizing on my work from yesterday.
