What's for Dinner, Fri., Dec. 19, 2014

I'm looking in my Meatloaf Bakery Cookbook. I have 3 lbs ground beef and 2 lbs pork. It would be nice to make this up and have leftovers for a few days while I decorate for Christmas and get my grades in.

Asparagus roasted in sesame oil, topped with toasted sesame seeds. I bought the freshest, most delicious-looking, tender spears on my way home from work tonight.

For dessert, I'm dipping some roasted pineapple slices in chili-dark chocolate.

Red wine.

then lost at the back of a fridge shelf. Still seems to be edible, but the tastes had sort of melded, so that I couldn't tell when I was getting onion or pepper or whatever with taste buds.

A question or two or three for people...

I'd like to send a friend and her husband some sort of meat item for the Holidays, and am looking for something that's A) storeable at room temperature, and B) doesn't have nitrates, nitrites, etc, etc, etc. and isn't sugar-cured.

Because their fridge space is next to non-existent, electricity could be iffy, and she has all sorts of allergy issues, and I basically can never send anything with preservatives to her, and he's diabetic. Bonus points if it's something they can share safely with their dog, too.

So does anybody have any ideas where that leaves me in terms of hams or turkeys or any such item? Smoked? Salt cured? Maybe even canned, if there are any canned hams that aren't disgusting formed slabs of pink processedness? Something already cooked would be nice, too, so that they only have to heat it up, if they want to do so.

I'm hoping folks might have some suggestions and maybe even some sources.

at the moment. Maybe a restaurant certificate or a Kroger card, or something from a natural foods store. Canned smoked oysters, freeze-dried salmon?

I live in a very rural area and there are so few good food selections here. I would have to drive 50 miles one-way to get something like you describe.

I'm not even sure there are any sorts of 'chain' supermarkets within a hundred mile radius or so of them. They aren't on a postal route, so anything I send is likely to sit in a post office for a day or three, which rules out frozen things or things with short unrefrigerated shelf-lives. I've sent them albacore, herring and/or kippers before, but I was hoping to do something other than fish.

Now I'm about to make a double batch of baked caramel corn. Today when I was sewing I actually snipped a little slice off the end of my thumb with sharp little scissors! So I'm trying to do kitchen work with latex glove and it ain't easy!

machine stitch together some stuffed bulky material and ran my index finger under the presser foot, piercing my finger and nail. I had slowly back out the needle and pull my finger out. It was a bloody mess.
