easy Mexican Coktel de Camarones

played around with this a few times over the holidays and thought ya'll might like to try.

1 lb cooked/peeled shrimp (bigger is better but any will do)
1 tomato, chopped
1/2 sweet onion, chopped
1 small cuke, peeled and chopped
1 or more jalepenos or seranos, chopped
1 avocado, peeled and chopped
2 Tbsp to 1/4 cup lime juice
Tabasco or other similar hot sauce to taste
spicy V8 or spicy Clamato or a combo of the two
1 bunch cilantro, chopped (parsley will do, but cilantro is much better)
salt

mix shrimp, vegs, Tabasco and lime, add V8/Clamato to just cover and chill well for a couple of hours to overnight (if you do overnight, save the avocado and some of the cilantro to add at serving time) salt to taste
serve in a tall milkshake glass or glass bowl with saltines, Tabasco or similar hot sauce and additional limes on the side. eat with ice tea spoon.

kind of a shrimp gazpacho - can be a side dish/appetizer or an entire lunch depending on serving size

good with Mexican beer, or margaritas

I'll opt for parsley because cilantro tastes like soap to me.

they say that soap thing is genetic but I used to hate cilantro and now I love it so I don't know what my deal was.

usually in the summer, but it still tastes bad.

I had a near death experience 2 years ago and thought that might help but no go!

I read that as the cilantro would help. Glad you are still with us! You are one of the nicest people on DU.
