What's for Dinner, Sat., Feb. 7, 2015

I think I am going to cook little smidgens of this and that for the rest of the day.

I might make a tuna/salmon salad with hard-boiled eggs, because I have some eggs I boiled the other day.

I might make....chicken something, as I have chicken broth from my crockpot venture two days ago.

I've been working all day, and while I enjoyed it 100%, I am also happy as a clam to be home with my kitty cats on this cold winter day.

Either BLT-A's (avocado), or baked cod with tomatoes, onion, potatoes and basil.

Given the fact I just popped open a beer, I'm leaning toward the former.

Husband gave it two .

I sauteed our sandwich onions in a little bacon fat and a couple of pinches of sea salt and pepper.

Mash boiled potatoes in the bottom of a bowl,

Add some greens- tonight that was slightly cooked lacinato kale, and some salad greens from my garden

Stir in some dressing either cashew tamari or some fancy version of ranch dressing.

Then top with some protein. I used a cut up Griller's Prime non meat patty.

Fast, simple, satisfying and delish!
