What's for Dinner, Thurs., Mar. 12, 2015

Today's my day off, so I'm making meatballs from my Meatball Shop cookbook. Tomato sauce on them.

I also cooked up the chicken to have on salads. I made up a huge salad with spinach and red leaf lettuce, all kinds of chopped vegetables, like red and yellow peppers, cucumber, carrots, and scallions.

As much as I like my job, a day off is so nice.

I marinated them in oregano, pepper, thyme, crushed garlic, fresh lemon and white wine. When I get home from work, I shred them, then use them for different dishes for the next few days. I'll be mixing it in with some bulgur tonight. The rest I'll use either in some pasta dish, or to make enchiladas.

to dip it in and crostini. It was 54 F and sunny all day. Feels like Spring .

Shopping day tomorrow. But, glad I had " bag o' veggies "in the freezer. Now that I think about it, I'll make a slurry from stock and call it a pork chow mein over crispy noodles.

....with avocado, shaved parm, hard-boiled egg, romaine, garlicky croutons from nutty-seedy bread, a squeeze of lemon and ceasar dressing. Oh, and leftover chicken breast too, of course.
