What's for Dinner, Thurs., Apr. 2, 2015

I've got a craving for chicken pot pie, so I put what was left of my roast chicken from 2 days ago into a big pot and added all the requisite goodies for stock. Now it's cooled, and I'll separate everything so I have what I need for later for constructing my pie.

BTW, that roasted chicken was out of this world. One thing I'll do again is use my gas convection roast setting at 250. The outside was so crisp, and the lemon, sage, and garlic flavored it perfectly.

I did want shrimp and avocado tacos tonight, but the avocado still isn't ripe yet. Maybe tomorrow?

So, a skillet with Italian sausage, peppers, mushrooms, onions, garlic and crushed tomatoes. I'll fold in some cooked cubed spuds to round it out. The usual Italian seasonings, yadda yadda.

A day off tomorrow, so a glass of vino (or three) is in order too.

on Mom's old methods which may not always have been the best, but just what she had the time to do. Now that I'm retired, I can certainly make time for roasting a chicken this way!

to clean out the fridge and the kitchen this/next week as we are leaving for a road trip to Texas. I am salivating for some Texas BBQ (brisket) as opposed to GA BBQ (smoked pork). There is a lovely market in New Braunfels, TX that sells awesome dry German sausage, beef jerky, turkey jerky, and other delectable temptations, so we'll probably come back with a cooler full of treats for everyone.

mac from scratch, chili from a can and tossed in some sauteed onion, garlic and bell peppers.

today was cold with a bit of snow, so i felt like a gut bomb.
