The RG will come up with something for dinner, but very shortly here, I intend to do some stir-fry pork with broccoli.
I have a huge bowl of bright green, beautiful broccoli that I blanched last night. Washed it, peeled the stems, and dipped it in boiling, salted water for about a minute. Then I plunged it into a big bowl of ice water to keep that gorgeous green.
There are so many things that can be done with broccoli when it's prepped like this. A cheese-broccoli omelette comes to mind, but yesterday I made a cold plate of vegetables and served it with a new kind of red pepper salad dressing that's made with yogurt. Cherry tomatoes, a handful of arugula, and some par-boiled broccoli made a simple and delicious lunch that I took to work. I used the roasted pepper dressing, which I found so good that I decided to try the jalapeno ranch next.

i got some asparagus at the farmer's market and have some cherry tomatoes and a zucchini that need used, so i figured pasta is the best bet.

(29,098 posts)I will probably oven "fry" some zucchini Parmesan chips. (Roast thinly sliced zucchini on oiled parchment. After you turn them sprinkle parm on top and continue roasting until the cheese is melty and a little brown.)
And for those of you that haven't discovered the Tavernello Brand wine yet...Run to Cost Plus/World Market and grab yourself a bottle. Screw Top Wine from Italy can be fabulous. We buy it by the case now for under 3 bucks a bottle. I prefer the red to the white but I use both now for cooking and our regular Sunday night bottle.

Also, I make zucchini Parmesan chips, too, and love them. Your methods seems like slightly less work, so I think I'll try it.

(146,218 posts)just gifted us some beautiful avocados, so I think we will eat those with some vinaigrette.
Good for you for prepping your broccoli. I recently did that with green beans that were very close to being completely bad and think I will make a curry dish with them later this week.

I eat a heck of a lot of beans, don't I? Just looking through the "What's for dinner" it's usually beans. Oh well, I make them yummy!
And I'm not a vegetarian, I just like beans !

(9,839 posts)Hasselbeck potatoes, ranch style beans, sauteed mixed greens, and a small plate of wild asparagus. Our asparagus has been waxing and waning with the weather and it should improve over the next few days.
It was my first attempt at hasselbeck potatoes and the results were a bit disappointing--the centers weren't completely done, they were undersalted and I hadn't added enough parmesan. Next time they will be better.
ETA: The kid who only eats white food (and desserts of all colors) ate bread, orange slices, and ice cream.

(50,130 posts)...have you explored the possibility that the white food kid may have a sugar addiction? (white carbs turn into sugar in the body). I had a young family member with that syndrome. We started reading about sugar and how some people obsessively consume white food only for the seratonin because their receptors handle it differently. Addicted to the seratonin rush.

(9,839 posts)for strep/bronchitis so I think they must have yeast overgrowth.
In all fairness, he does eat cheese, eggs, bacon, some meats, pizza, milk, fruits, school lunches, but his parents don't seem concerned that a large majority of the foods he eats are sweets and processed foods. They even buy those horrible Lunchables for him. But his first question when he comes over on Sunday is "do we have dessert!"
How did your family handle this?
