Camp cold lunch ideas needed.

This will be the 4th year I will have my 2 grandchildren here for summer day camp. I enjoy their visit and they have a great time. The girls are 12 and 14 and are reasonably healthy eaters. I do have one big problem.
Cold lunch must be sent with the girls.
Snacks, fruit, drinks, no problem.

Sandwich ideas are needed. Because they have to bring an insulated cooler(w/ice pack), I can send certain meats but I have run out of good ideas in order to make sandwiches more interesting.

In my internet search for lists, I've found a few good ideas but most require preparation and I don't have time before I have to take them to camp. Must leave the house by 7:30.

Any ideas would be a great help.

they might like. You could do this the night before. Pack a bag of tortilla chips or strips for scooping it (or a fork.)

Hummus & pita chips.

Pimento cheese sandwiches with NO MAYO!!! My mother made pimento cheese using shredded cheddar cheese and a bit of velveta, cook on stovetop in double boiler until the cheese melts, stir in a jar of pimento slices and stir well. Refrigerate. I had egg allergy as a child and grew up not eating mayo. Mom came up with many alternatives and I still make this pimento cheese recipe to this day, although I've stopped buying velveta. I just add a little milk to the melted cheese. When the cheese starts to firm up, I add in the pimento and stir until well mixed.

Cream cheese & pineapple sandwiches.
Cream cheese with chopped green olives, toasted pecans, a bit of green onion. Great on crackers or whole wheat bread.

At 12 and 14, I would suggest that these girls be responsible for putting together the shopping list, going with you to the store and preparing their own lunches.

Sometimes kids like to eat the same thing every day. Other kids like a variety.

With an insulated cooler, the possibilities are endless really, so make this a fund grandma/grandkid project!

...and that made me think "picnic". So I googled "picnic recipes" and BOOM-about a billion hits with tons of great ideas. So guess what I suggest.

spread pita with hummus, tuck in shredded lettuce, sliced white cheese, olives, diced red pepper and cucumbers. Sounds yummy.

Or think of all the varieties of sandwiches that Subway carries, and get some ideas from that.

Split some dogs, grill them, and drop in a baggie,
A few slices of toast with a slice of wrapped cheese in another baggie.
The pickle and foil packs of condiments finish it off.

At least this always worked well with the boys, maybe because they were making their own lunch. With my girls there was no hope!
