We have greens coming in from the garden - lettuce and arugula, as well as basil and chives...sugar snap peas and asparagus and strawberries from the farmers market. sweet peppers. Toasted walnuts. More after the pic.
I marinated a salmon filet (used Costco salmon) in a mix of bar-b-que (smoky red type) and Island Teriyaki (Trader Joe) for 24 hrs in the fridge - and some asparagus in a mix of lemon juice, olive oil, salt and pepper for an hour.
While I had the grill warming, I tore the lettuce and plated it, added some shredded basil and chopped chives - added raw snap peas and cubed sweet peppers and sliced strawberries. Grilled the salmon for 3 minutes per side, then grilled the asparagus for about 5 min.
Added the asparagus spears to the salad, then topped with a slab of the salmon. add toasted walnuts, and drizzle with the marinade from the asparagus.
Wow.....the flavors all worked together so well.

(111,276 posts)and I buy it frozen. Their frozen fish is much better than other frozen fish because you don't need to wring it out before cooking, the factory trawlers that prepare it and flash freeze it in vacuum sealed bags do a great job.
One way I love to prepare salmon is steaming the fillets Chinese style, topped with a spicy sauce, scallions, and fermented black beans. Otherwise, I'll use the stovetop grill and do as little to it as possible.

Not saying your food is not good, because I am sure that it is, but I am very happy with only a few mouthfuls.

(60,015 posts)I get to about 1500 calories a day and far prefer much healthier ingredients than I used to use - still keeping that 60 lbs off that I lost 5 years ago!

(60,015 posts)I used to be a chemist (well, I guess it's not that I am no longer one...just not doing it as a job). But I've been told all chemists like to cook - and I guess that sure fits me.
Big change is that I don't rely on recipes much any more - just developing an understanding of what we like, and how to make things with the seasonings we enjoy.
Fun stuff, this cooking thing!

(5,376 posts)Jotting down the recipe to try soon. How lovely that you have the fresh veggies from your garden already (not that I'm surprised, of course), but I'm guessing they'll be available at my local organic produce shop. Anyway, many thanks! Can hardly wait to enjoy for myself!

To echo cbayer, I go for quality and taste over quantity. What I do is eat ~5 times a day instead of 3.
