I'm making this cauliflower curry recipe. I so wish I could have it with fragrant rice. Hey, maybe I can if I find that thread about how to cook rice so the glycemic level is low.
Also on my agenda is turkey breast with roasted Poblanos and topped with cheddar cheese. This could be a sandwich or a wrap.
Then a big fruit salad with watermelon, pineapple, and berries.

(41,694 posts)Grilled with potato salad on the side. Served with cheese and chili on organic hot dog buns.
Washed down with raspberry flavored fizz water and Talenti Tahitian Vanilla ice cream for dessert.

(41,694 posts)bacon, swiss cheese, spinach and green onions. Making it with "store-bought" frozen pie dough sure saves time.
We're having perfect Colorado weather for a change. Many enjoying the high white water in the rivers and creeks, but sadly, though we have great trained responders, some have not been rescued.

(2,016 posts)I just made a mac salad, and making stock from the parts of the whole chicken right now. Pinto beans with jalapeno and cilantro, and some leftover steamed broccoli from the fridge.

(22,703 posts)I had grilled rib eyes today, but I alternate between beef and lamb. I truly don't know which I prefer, because both are delicious.

(971 posts)Over rice.
A chicken soup with coconut, galangal (related to ginger, but different), lemongrass, and Kaffir lime leaves. Plus other stuff. Very tasty.
Got reminded of this at a small Asian Food Place at Tusayan, a few weeks ago. I was in the mood for something different, and this place was new.
Pleasantly surprised, a nice little place.
Been running around trying to find all the ingredients. Finding galangal, lemongrass, and fish sauce weren't difficult, I know a few Asian grocery stores.
The Kaffir Lime leaves are proving to be a problem. I may just sub some Mexican Lime leaves from the one outside the back door.

(9,825 posts)and cucumbers, and my SIL brought me zukes and bell peppers today. Tomatoes can't be far behind.
I made that chicken & dumpling recipe from the Jarrett House in Dillsboro, NC for lunch today and it is a keeper. If anyone wants the recipe, please let me know and I will post it. In the future, we will probably increase the number of dumplings, but these are delicious and just the way I like dumplings. I wish I had taken a picture. We also had yellow straight-neck squash sauteed with Vidalia onion and bell pepper, green beans, sauteed cabbage, tomato/cucumber salad. Cantaloupe and watermelon, peaches and white nectarines for dessert. (...then, a nap!)
It is hot as hades here in Georgia and it looks like we are in for a spell of hot/dry weather, but we are fortunate to have such lovely, delicious veggies and fruits to keep us happy.

(14,733 posts)Unless I've got the name mixed up again, and it's chicken something else casserole.
Cube equal parts cooked ham and chicken, mix with cream of chicken soup mix. Squirt trails of honey mustard over the bottom of a casserole dish, spoon mixture into dish, more trails of honey mustard over top, cover with slices of swiss cheese, then cover with a layer of stuffing. bake for an hour at 350, the first half covered with aluminum foil, the second half uncovered.
We also had garlic bread with it.
Just under 2 gallons of black raspberries picked so far now, as the season continues.

The chicken casserole sounds great!

(14,733 posts)I don't have any blackberries planted, so not sure what the season would be for those here. (Here being SW Ohio, Boehner's district.)
As far as the raspberries go, I've only really been picking in any quantity for 3 days so far, so I'll probably be picking for another 7-10 more days before they're all picked out here. I'm going to cross my fingers and hope for 5 gallons this year. Once I run them through the food mill, I get about half juice and half mash, with the mash thrown out for the birds and other varmints and the juice kept back to make jelly.
I just ordered three different kinds of blueberries, one blue type, one hot pink type, and one pale pink type, going to try my hand at container gardening for those. Also found out the saffron crocuses I ordered won't ship til August, which is kind of annoying, but so be it.
