What's for Dinner, Wed., June 17 2015

The RG and I had a wonderful lunch, so I think I'll just munch on vegetables and yogurt dip for dinner.

I made quiche with zucchini, asparagus, goat cheese, and proscuitto in it. On top I put thyme, chopped red pepper, and thinly sliced bella mushrooms.

I also made a tossed salad with greens from the garden. I only put sliced cucumber in it, but made vinaigrette using basil. This went perfectly with the quiche.

For dessert, we had taleggio cheese with fresh figs. Heavenly. I also tapped into my TJ chocolate-covered biscotti, and we dipped them in red wine.

Then I had to take the RG to the airport, but he'll be back tomorrow night and we'll probably dine at our favorite Portuguese restaurant.

Had some frozen chicken fajitas strips. Tried em, will finish off the package, won't buy them again, full of gristle. If I want them again in future, I'll just slice up chicken breasts to make my own.

I think I'm finally at the peak of raspberry season here, picked just over a gallon today, bringing me up to the 5 gallons I was shooting for for the season. But there are still tons of berries that haven't even ripened, so maybe my new goal for the season will be 7 or 8 gallons. We're rapidly running out of free freezer space, so I'll have to start doing something with them quickly.

Browned all well then hit the pan with some Merlot. Reduced and added some beef stock. Simmered till "dry", tossed and plated with diced chives and parsley.
