What to serve with jambalaya?

I'm going to have about 20 people over next month for an outdoor jambalaya fest. There will be beer and sangria, of course, but would appreciate suggestions for sides. I was thinking a chocolate ice cream cake for dessert. THANKS!

But cornbread, for sure (maybe jalapeno).

However, I bet anything from Chef Paul Prudhomme's cajun site would work well! Sides here:

You can easily serve it in disposable bowls and people can easily get seconds.

If you must, as salad of some sort or some appetizers before hand - cheese crackers, cream cheese with pickapeppa sauce, bowls of zap's potato chips, fried or pickled okra.

I see lots of suggestions for corn bread but there is plenty of starch in the jambalaya and i think it's over kill.

Make sure you have a variety of hot sauces, because everyone likes this dish differently.

And if you have time, make one chicken/andouille and one oyster/crab.

Corn on the cob (preferably grilled)
Cornbread
Collard Greens
A light cucumber salad might make for a nice contrast to the heaviness of the meal.
Also a fruit salad may make for a nice contrast as well.

How about some sliced cucumber-onions in water-vinegar-sugar? That's an old-timey dish that everyone always loves.

I'm thinking peach lanterns for dessert, and home-churned ice cream. Peach lanterns are a kind of hand pie.

WOW...so many great suggestions. I'm really grateful for them all. There are some stand-out experts in this group which is why I came here in the first place. Maybe a few of you could come grocery shopping for this event with me.

Party begins at 5:00 and folks know what's on the main menu, so I imagine most of them will be skipping lunch.
