What's for Dinner, Sunday, July 5

After yesterday's cookout, ready for something simple.

Had some Swedish meatballs in mushroom gravy that I froze about 3 weeks ago, The meatballs were left from a big batch I made for my son and granddaughter, both claim Swedish meatballs as their favorite dish.

Cooked some rice, baked some fresh yellow squash and sliced up a big ripe Jacksonville, Texas tomato.

Wanted some dessert. Had about 2/3 cup whipping cream, so I mixed it with about 1/2 cup milk, 1/3 cup sugar, teaspoon vanilla and pinch of salt. Put in my Krup ice cream maker and made a little batch of vanilla ice cream, perfect for 2 people. Topped the ice cream with fresh sliced strawberries.

Not a bad Sunday meal and so easy.

Pasta alla Norma - we have a load of just picked eggplant, tomatoes and chili peppers - so off to the kitchen I go!

Serving with steamed zucchini. Right now sipping a nice Prosecco and listening to an audio book with my wife - Treasure Island!

3. Zucchini lasagna

I'm making it with grilled zucchini and red pepper from yesterday. Fresh basil, of course.

Cold broccoli with red pepper dip.

demintexas, I once read where Swedish meatballs ranks highly as a favorite dish of Americans. I know it's definitely one of my favorites. Sounds like a terrific meal, what with the fresh squash and homemade ice cream w/strawberries.

I finally got my new computer about 5 p.m., and this is the first site other than Opera that I went to! I am so thrilled to have it, as my laptop does not have enough memory, and it was slow--had a third the memory of what I'm used to. The laptop is a relatively new computer, but I hardly ever used it, so I didn't know how slow it was. Having a slow computer can make your life a living hell, and my life has been hell ever since the motherboard on my DT died, about 10 days ago. Waiting for a computer to catch up to what you want to do can make a person very crabby.

Ie, a single orange bell pepper and a leftover chunk of formed ham diced up with scrambled eggs and shredded cheese.

Went out shopping earlier, but mostly for the parents, so they didn't have to. Based on their list, I'm suspecting they're doing oyster stew tonight, with a side of a 'mediterranean salad' - red onions, black olives, chunks of tomatoes and cucumbers with a bit of feta in an oil and vinegar 'dressing'.

Although I dug out my hand crank ice cream churn and picked up some rock salt, I still haven't made any ice cream, because the freezers are full of frozen black raspberry juice. I desperately need to get started on a few batches of jelly, simply to free up that freezer space. (Hmm, or maybe even some black raspberry ice cream.)

I have made both these types of fruit yogurt using my little Krup ice cream maker. It makes about 3 1/2 to 4 cups/

I used to use a hand cranker, but with just the two of now, the little one works fine and it is so easy to use.

Mixed greens and veggie salad - greens, cukes, small yellow squash, celery, cherry tomatoes - on the side.

(Chose a nap and a movie instead of a walk afterwards...)
