For appetizers, cilantro-chicken rolls from TJ, dipped in hoisin sauce.
Next up will be another appetizer, ricotta-walnut-herb-stuffed mushrooms.
For dinner, pork-loin with chopped sage on top. Sweet potato fries.

(23,156 posts)Well, it was preceded by blackened catfish, rice pilaf, and stir fried veggies. But the apple cake is heavenly.
Here's the recipe, adapted to high altitude:
Apple Cake
Cream together ½ cup Crisco and 1 cup granulated sugar
Add 2 large eggs and 1 generous teaspoon vanilla. Beat well
Dry ingredients:
2 scant cups unbleached white flour, ½ tsp each baking powder, baking soda, ¼ tsp salt.
Add this, alternating with 1 cup sour cream
Now fold in 2 cups finely chopped apple.
Spread batter in greased 13x9x2 inch baking pan.
Topping:
1 cup chopped nuts, 1 cup packed brown sugar, 1 ½ teaspoons cinnamon, a sprinkle of nutmeg, and 4 tablespoons melted butter. Sprinkle topping evenly over batter.
Bake at 350 for 35-40 minutes.
For normal altitude, make it two full cups of flour, and a full tsp each of baking powder and baking soda. I actually put in more like three cups of chopped apples. I used Galas. It is SO good.

And I like this recipe. We have two apple trees, and I will be baking this in the Fall when they are ripe. My mom used to make an apple cake, and this sounds like it would be very close to what she made. Thanks!

(23,156 posts)Because I didn't mince the apples as finely as I have other times I made, this, the cake part is very noticeable and excellent. I'm thinking of seeing what happens if I just bake up the batter on its own, no apples, no topping. I'm not a sufficiently creative baker to figure out what else to do besides the apples. Although, perhaps I could try some pineapple, or maybe instead of vanilla use some lemon juice and have a lemon cake.
I'm open to suggestions.

But I bet pineapple would also be tasty. Maybe with chopped macadamia nuts in the topping? And maybe some shredded coconut in the batter?

Like all of my best recipes this one comes from a cookbook I bought in the 1970s. They just don't make cookbooks like they used to.
